Earle & Ginger staff ready to tuck into the cakes.

The donations pack had been ordered, muffins frosted, cake made and tray bakes sliced, we were ready to host our first Macmillan Coffee Morning. Macmillan make sure no one faces cancer alone by reaching out and supporting everyone affected by the disease.

With the smell of chocolate frosting in the air, and plates stacked with plump chocolate chip cookies, the showroom surfaces were decorated with their edible badges. The staff were first to try. In went the donations closely followed by mouthfuls of muffins and slices of tiffin, anything sugar loaded eaten before 9am was sure to add brightness to a Friday morning. With the competition already underway and donations stacking up, we were on our way to helping support a great cause. We managed to raise £200.00 and proudly announce that our warehouse manager Joel won the competition for having the closest guess of how many icing dots were on the cake!
Well done and thank you everyone for your support.

If that one piece of cake and cookie wasn’t enough…here are some of the recipes we used:

Rich and chocolatey fridge cake

rocky road cakeWhat you will need:

150g unsalted butter
100g golden syrup
100g dark chocolate,
100g milk chocolate
1 medium egg, lightly beaten
330g digestive biscuits
60g pecans
60g sultanas
100g glacé cherries

How to make:

  1. Set out a square tin ready for the melted mixture, the size is up to you depending on how deep you would like your fridge cake to be.
  2. Melt the butter and golden syrup in a pan and bring to the boil. Add the chocolate, reduce heat to low and whisk until the chocolate has melted.
  3. Gradually add the beaten egg and continue to stir with the whisk until the mixture has thickened a little and formed a shiny emulsion. The egg will cook in the heat of the mixture but don’t let it boil. Remove from the heat.
  4. Break the biscuits into chunks (quarters are fine), put them in a bowl with the pecans, sultanas and half the cherries. Pour the hot chocolate mix over the dry ingredients and mix gently. Decant into the prepared tin, leaving the runny chocolate on the side of the bowl for now. Press the mixture flat in the tin.
  5. Put nuts in the chocolatey bowl and, using a spatula, coat them in the leftover chocolate. Sprinkle in a loose pattern over the biscuit cake, then add the remaining cherries. Chill for 3 hours or until set.
Thick and chewy chocolate chip cookies

What you will need:

3 cups plus 2 tablespoons plain flour
1 teaspoon baking powder
¼ teaspoon baking soda
1 ½ teaspoons kosher salt
1 cup unsalted butter, cold and cut into cubes
¾ cup + 4 teaspoons (6 ounces) light or dark brown sugar
½ cup granulated sugar
2 eggs, cold, lightly beaten in a separate bowl
1 teaspoon vanilla extract
1 cup dark chocolate chips
1 cup white chocolate chips

How to make them:

  1. Line a large baking sheet with a silicon mat or parchment paper. Set aside.
  2. In a medium bowl, mix together the flour, baking soda, powder, and salt. Set aside.
  3. In a standing mixer fitted with a paddle attachment or using a handheld whisk, beat the butter until it comes together in one lump, about 1 minute. Add in the sugars and beat until the sugar dissolves into the butter. Lower the speed to medium-low, and mix in the eggs and vanilla and beat until mixed (the batter will be lumpy). Gradually add in the flour mixture, beating until a little flour remains. Fold in the chocolate chips with a rubber spatula.
  4. Divide the dough into 12 even pieces. Shape the dough roughly into a ball, but do not roll it. Place on the prepared baking sheet, spacing 2 inches apart. Refrigerate for at least 30 minutes but up to 12 hours before baking.
  5. Preheat oven to 375°F. Bake cookies for 18-22 minutes, until light golden brown. We took our cookies out of the oven a few minutes early, this is what gives them their chewy texture, but if you prefer your cookies crunchier, keep to the suggested baking time. Enjoy!
Classic Victoria Sponge

Paying homage to the Great British Bake offs Mary Berry, this one disappeared the fastest…even the crumbs!cake_smallforblog

What you will need:

4 free-range eggs
225g/8oz caster sugar, plus a little extra for dusting the finished cake
225g/8oz self-raising flour
2 tsp baking powder
225g soft butter at room temperature, plus a little extra to grease the tins
Strawberry Jam (or flavour of your choice)
Double Cream for filling

How to make it:

  1. Preheat the oven to 180C/350F/Gas 4.
  2. Grease and line 2 x 20cm/8in sandwich tins: use a piece of baking paper to rub a little butter around the inside of the tins until the sides and base are lightly coated. Line the bottom of the tins with a circle of baking or silicone paper (to do this, draw around the base of the tin onto the paper and cut out).
  3. Break the eggs into a large mixing bowl, then add the sugar, flour, baking powder and baking spread.
  4. Mix everything together until well combined. The easiest way to do this is with an electric hand mixer, but you can use a wooden spoon. Put a damp cloth under your bowl when you’re mixing to stop it moving around. Be careful not to over-mix – as soon as everything is blended you should stop. The finished mixture should be of a soft ‘dropping’ consistency – it should fall off a spoon easily.
  5. Divide the mixture evenly between the tins: this doesn’t need to be exact, but you can weigh the filled tins if you want to check. Use a spatula to remove all of the mixture from the bowl and gently smooth the surface of the cakes.
  6. Place the tins on the middle shelf of the oven and bake for 25 minutes. Don’t be tempted to open the door while they’re cooking, but after 20 minutes do look through the door to check them.
  7. The cakes are done when they’re golden-brown and coming away from the edge of the tins. Press them gently to check – they should be springy to the touch. Remove them from the oven and set aside to cool in their tins for five minutes. Then run a palette or rounded butter knife around the inside edge of the tin and carefully turn the cakes out onto a cooling rack.
  8. Spread the jam onto one layer, and softly whip the cream and sandwich together both halves.
